(Formerly Belgian or Brussels Chicory) Sow from April to June, sparsely in the row. Leave about 30 cm between rows. In October, begin removing the roots, using the most developed ones. Cut the leaves 2 cm above the collar and a third of the root. Choose a sunny location and plant them 3-4 cm apart. Then cover with 20 cm of soil or peat and finally spread straw, a mat, or a sheet of plastic on top. Within 3-4 weeks, the roots will have developed a dense clump of leaves. During the winter months, perform the same operation in cellars, caves, or sheltered places.
