Flax is an excellent source of Omega-3, even greater than that found in some fish oils. Flaxseeds are mucilaginous and, once immersed in water, quickly develop a gelatinous membrane that is completely water-repellent. They require the same care as other mucilaginous seeds (basil, watercress, and arugula), especially in the first few days of sprouting. On average, they take a long time to grow, and the sprouts are long and sturdy because they are rich in fiber.

Growing: Soak in water overnight. The next morning, arrange them on the shelves of the sprouter, keeping in mind that the seeds will increase in volume at least fourfold during this process. Store at room temperature and in well-lit conditions. Water 2-3 times a day until complete germination, which occurs in 3-4 days. Eat them straight away or store them in the refrigerator for 1-2 weeks.

Preparing Sprouts
A few simple rules for a healthy and tasty lifestyle! Before you begin, keep in mind that seeds increase up to four times their volume during the germination process: we recommend starting with two teaspoons of seeds for small seeds and half a cup for legume and grain seeds.
 
Preparation: Pre-germination
Seed germination is a process that requires the presence of four essential factors: water, air, heat, and light. Only the combination of these elements allows the chemical reactions that "ignite" the seed and make it germinate. The first phase is pre-germination, which is very important as it activates the germination process. It involves placing the seeds in a container, pouring water over them, and letting them rest for 8-12 hours. A good habit is to soak the seeds in water in the evening so that they'll be ready for the next germination phase the next day.
 
Mucilaginous seeds:
Some species, such as arugula, watercress, flax, basil, and chia, require special care, since, once placed in water, they develop a gelatinous film. With these seeds, it's advisable not to proceed in the traditional way but to soak them in water for only a few minutes (5-15), then immediately place them in the germinator trays. The mucilage surrounding them will keep them moist for the first few days, during which time they should be watered lightly, preferably with a spray bottle, or not at all. In the following days, as the gelatin is absorbed and the first sprouts appear, increase the amount of water until, by the time of harvest, the watering is regular, similar to that used with other sprouts. If the seeds are too small and risk getting stuck in the cracks, you can place a piece of gauze on the bottom of the tray.
