It is grown like carrots, sown in spring and can be harvested as needed, even after the winter frosts. In fact, it is even better when eaten after the frosts.
In a letter from prison, Antonio Gramsci wrote to his sister-in-law Tania to go to the Ingegnoli Brothers' shop in Piazza del Duomo in Milan to buy "(...) a nice bunch of seeds: 10 carrots, but of the parsnip variety, which is a pleasant memory of my early childhood; in Sassari they sell some that weigh half a kilo (...)"
