There are various types of lentils on the market: green, green-brown, brown, orange, and yellow. Like all legumes, they are rich in protein, iron, vitamin C, fiber, and minerals such as potassium and phosphorus. To make them easier to digest, it's advisable to steam the sprouts for a few minutes. Lentils germinate quickly, extremely easily, and in large quantities. The sprouts should be consumed or stored before the leaves emerge to avoid losing most of their nutrients. The sprouts can be eaten with their entire skin.

Cultivation: Soak them in water overnight. The next morning, arrange them on the trays of the sprouter, keeping in mind that the seeds swell at least fourfold during this process. Store at room temperature and in good light. Water 2-3 times a day until complete germination, which occurs in 3-4 days. They can be consumed directly or stored in the refrigerator for 1-2 weeks.

Preparing Sprouts
A few simple rules for a healthy and tasty lifestyle! Before you begin, keep in mind that seeds increase up to four times their volume during the germination process: we recommend starting with two teaspoons of seeds for small seeds and half a cup for legume and grain seeds.
 
Preparation: Pre-germination
Seed germination is a process that requires the presence of four essential factors: water, air, heat, and light. Only the combination of these elements allows the chemical reactions that "ignite" the seed and make it germinate. The first phase is pre-germination, which is very important as it activates the germination process. It involves placing the seeds in a container, pouring water over them, and letting them rest for 8-12 hours. A good habit is to soak the seeds in water in the evening so that they'll be ready for the next germination phase the next day.
 
Mucilaginous seeds:
Some species, such as arugula, watercress, flax, basil, and chia, require special care, since, once placed in water, they develop a gelatinous film. With these seeds, it's advisable not to proceed in the traditional way but to soak them in water for only a few minutes (5-15), then immediately place them in the germinator trays. The mucilage surrounding them will keep them moist for the first few days, during which time they should be watered lightly, preferably with a spray bottle, or not at all. In the following days, as the gelatin is absorbed and the first sprouts appear, increase the amount of water until, by the time of harvest, the watering is regular, similar to that used with other sprouts. If the seeds are too small and risk getting stuck in the cracks, you can place a piece of gauze on the bottom of the tray.
