Adzuki sprouts are as well-known to Asian cuisine lovers as mung bean and soybean sprouts. They require a lot of water and are best grown using the SproutBag method. They are particularly crunchy and rich in fiber and water, a characteristic they maintain when grown away from light, which stimulates cellulose production. To soften their texture, they can be lightly steamed and then served with soups or salads. They are excellent served alone as an accompaniment to appetizers and other drinks.
Growing: Soak them in water overnight. The next morning, arrange them on the trays of the sprouter, keeping in mind that the seeds will increase at least fourfold during this process. Store at room temperature and in good light. Water 2-3 times a day until complete germination, which occurs in 3-4 days. They can be consumed directly or stored in the refrigerator for 1-2 weeks.
